I'm baking a cake for a girl at work tomorrow. I'm looking for a fabulous recipe that someone has used before. My grandma used to make boxed chocolate cake and added mayonaise it was good and moist but im looking for something to make from scratch. And any tips on good chocolate to use, eggs white or brown? I heard some where that when baking it is better to use eggs at room tempature, any one hear of this before?Does anybody have a fabulous recipe for really moist chocolate cake?
SUPER MOIST CHOCOLATE CAKE
1. 5 cups of all purpose flour
3 tablespoons of sifted good quality cocoa
1 teaspoon baking soda
1 cup white or vegan brown sugar
0. 5 teaspoon salt (optional)
5 tablespoons canola oil (can substitute with any veg. oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
By far the most surprisingly deeelightful cake. This recipe is great for adults and for kids ages 3 and up.
1. Put your flour into mixing bowl, add cocoa, baking soda, vegan sugar and salt and mix well.
2. Make three deep holes in the dry mixture. Into one, pour the oil, into the next, pour the vinegar into the next, pour the vanilla.
3. Pour the water into the bowl, over all of this--- making a great big mess.
4. Mix the wet and dry ingredients together until there aren't any more lumps and pour into a 9 inch by 9 inch baking pan, two inches deep, that has been greased and floured.
5. Bake at 350 for about half an hour, test with a fork.
Enjoy this delicious cake. You will be surprised at its moistness and richness!!!!! It can be cooled and iced with your choice of icing or can be enjoyed on its own. The batter can also be used to make cupcakes!!
TIP OF THE DAY: for an instant cake, have the premeasured, premixed dry ingredients at hand, then simply add the wet ingredients when you want a fresh treat! It makes a great birthday cake! Hey, it even freezes well!

i've never made one from scratch but when i make a cake from box i follow the instructions as is and then add choclate pudding iit comes out really moist.

Original recipe yield:
1 - 9x13 inch pan
PREP TIME 20 Min
COOK TIME 40 Min
READY IN 1 Hr
INGREDIENTS
3 (1 ounce) squares unsweetened chocolate, chopped
1 cup mayonnaise
2 tablespoons vinegar
2 tablespoons vanilla extract
3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon salt
2 cups warm water
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Melt the chocolate in a double boiler or in the microwave.
Pour the melted chocolate into a large mixing bowl. Blend in the mayonnaise, vinegar and vanilla. Combine the flour, sugar, baking soda, and salt and gradually stir into the chocolate mixture. Slowly stir in the warm water. Pour batter into prepared pan.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Moist Chocolate Cake
225 g butter
100 g dark chocolate, chopped
150 ml water
300 g plain flour
2 teaspoons baking powder
275 g soft brown sugar
150 ml sour cream
2 eggs, beaten
ICING
200 g dark chocolate
6 tablespoons water
3 teaspoons single cream
1 tablespoon butter, chilled
prepare a 33/20cm/13x8inch cake tin with baking parchment.
In a saucepan melt the butter, chocolate and water over a low heat, stirring frequently.
sieve the flour and bake powder in a mixing bowl and stir in the sugar.
pour the hot chocolate liquid into the bowl and then beat well until everything is evenly mixed.
stir in the soured cream, followed by the eggs.
pour the cake mixture in the prepared tin and bake at 190oC/mark5 for 40/45 mins leave to cool and then turn out on a wire rack until cooled completely.
To make the frosting, melt the chocolate with the water over a very low heat, stir in the cream and remove from heat.
Stir in the chilled butter.
Pour the frosting over the cooled cake.
It can get a bit messy but at least it tastes good.
this will then set and you can cake decorate for whatever your occasion.

My favorite recipe for the most moist cake on the planet came from the side of a can of Hershey's Cocoa Baking Powder. You use boiling hot water and it looks really thin when you make it, but when it comes out of the oven, it's lighter than air and so moist you will almost die.
I always use that recipe.
You can use the recipe for frosting on the can too, or just use premade, as the cake is the star of this recipe.
CHOCOLATE MAYONAISE CAKE (from scratch- can't beat the moistness!!)
2 c. flour
1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla
Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees for 35-40 minutes.
As far as using eggs at room temp, it just sounds like a bad idea... And the type of egg truly doesn't matter. But in this recipe, your mayo acts as a cohesion instead of egg! Good luck :-D.
