Not cookies...but this is a great recipe:

Canned fruit pie filling (apple, cherry, whatever you prefer)

1 Box Cake Mix (I used yellow)

1 stick of butter

Spead fruit in bottom of baking dish. Pour dry cake mix on top. Slice stick of butter into about 8 pats and place them on dry cake mix.

Bake in oven for 30 mins.

YUMMY!!!
Oh, this is THE best recipe ever..in the whole world. You need two boxes of Devil's food cake mix...1/2 cup of vegetable oil and 6 eggs...mix it all together. It will make a dry mix...like a bread dough. Roll it into 1 inch balls and place on a cookie sheet. Bake at 350 for about 10 minutes..until the tops of the cookies begin to crack. Let it cool. Put them together in an Oreo cookie format with your choice of cake frosting in the middle. We call them homemade Double Doozies....like the ones that cost $3 a piece in the malls. They are FANTASTIC.
INGREDIENTS:

1 packet. cake mix (any flavor)

1/2 cup butter, softened

1 egg

PREPARATION:

Preheat oven to 350 degrees. In a large bowl, combine all ingredients at low speed until dry ingredients are moistened and dough is thoroughly mixed. Drop dough by rounded tablespoonfuls 2'; apart onto ungreased cookie sheets.

Bake at 350 for 9-12 minutes. Cool two minutes on cookie sheets, then remove to wire racks to cool..

If using chocolate cake mix, add 2 Tbsp. water along with egg. You can stir in chocolate chips, coated candy pieces, chopped nuts, or oatmeal. Frost the cookies, using canned frosting, or make sandwich cookies by spreading frosting between two cookies.
Gooey Butter Cookies

8 ounces cream cheese (1 package)softened

1/2 cup butter, softened

1 egg

1/4 - 1/2 teaspoon almond extract

1 package yellow cake mix

powdered sugar

Preheat oven to 325 F. In a medium bowl, cream together the cream cheese and butter. Stir in the egg and almond extract. Add cake mix, and stir until well blended. Batter will be very stiff. Refrigerate dough for 2 hours to make it easier to work with. Coat hands with powdered sugar, roll batter into 1'; balls. Place 1 inch apart onto parchment lined cookie sheets. Bake for about 8 minutes. Remove from baking sheets to cool on wire racks. Sprinkle warm cookies with powdered sugar.

Try using chocolate cake mix and other ingredients such as nuts, candy chips, coconut, etc. for your own personal variation.

This recipe is a family favorite. I use a spring loaded 1 inch cookie scoop to help with this recipe. Scoop the dough with it and drop in bowl with powdered sugar, several at a time. The dough will get coated with powdered sugar making rolling them much easier. The parchment paper is non-stick and reuseable. Makes clean up faster too.
I cake mix use directions on the box except omit water and I use only two eggs...mix well Make a 1-1 1/2 inch ball insert a rolo candy into center reform dough into a ball and roll cookie in sugar. Place on cookie sheet about an 1 1/2 inches apart Bake cookies in 350'; oven for about 8-10 minutes or until baked. Cookies will spread and be flat when done
