Any good recipes for drop cakes?

I've been wanting a drop cake for the last week or so, only to find out the only bakery I've ever found that makes them has gone out of business! Anyone have a good recipe for drop cakes? If I can't buy them, I at least want to figure out how to make them.Any good recipes for drop cakes?
How about this one





Currant Cakes(Old-Fashioned Christmas Drop Cakes)





1 lb Sugar


1 lb Butter


6 ea Egg


3/4 lb Flour


1/4 t Salt


1/2 lb Currants


1 ea Lemon, juice of


1 ea Lemon, rind of





Mix the currants with some of the flour. Work butter and sugar together to a smooth cream, then slowly work in whole eggs one at a time. Add a little of the flour, rind and juice of the lemon and salt. Work in slowly the rest of the flour and the currants. Drop by spoonfuls on large buttered pans, pressing flat with a knife as the cakes are better when very thin. A good plan is to heat the pan a bit and allow the cakes to melt as much as possible before putting them in the oven to bake. Be sure to butter the pans thoroughly; otherwise, the thin cakes will be difficult to remove. (recipe didn't include baking time or temp).Any good recipes for drop cakes?
DROP CAKES


1/2 c. shortening


1/2 c. butter


3 c. white sguar


3 eggs


1 c. sour milk or buttermilk


1 tsp. baking soda


1 tsp. cream of tartar


4 c. flour


Cream shortening, butter and sugar together. Add eggs. Dissolve baking soda in sour milk and add. Mix cream of tartar, and flour and stir into first mixture.


Drop by spoonfuls onto ungreased cookie sheets and bake about 20 minutes at 350 degrees or until cakes spring back at a touch and are lightly browned. Makes 4 to 6 dozen.

I never heard of a drop cake before so you question made me look for a recipe. I did find this one for a fried drop cake:





FRIED DROP CAKE





1 1/3 cups flour


2陆 teaspoons baking powder


录 teaspoon salt


1/3 cup sugar


陆 cup milk


1 egg


1 teaspoon melted butter





Beat egg until light and fluffy.


Add milk.


Sift dry ingredients together and add to egg/milk mixture.


Add melted butter.


Drop by spoonfuls in hot, new, deep fat; fry until light brown and cooked through -- test doneness by piercing with a skewer, or breaking apart.


Remove with a skimmer, and drain on brown paper.





and I found a recipe for a currant cake (old fashion Christmas drop cakes), but the recipe does not state how long to bake the cakes and at what temp

1 small teaspoonful baking-powder


1 pint flour


1 cupful washed and picked currants


1 teaspoonful each extract nutmeg and lemon


1/2 cupful milk





To prepare this Drop Cakes Recipe, first rub the butter and Sugar to a white, light cream; add the eggs, beat ten minutes; add the flour and powder sifted together, the milk, and extracts. Mix into a rather firm batter, and drop with a spoon on a greased baking-tin; bake in a quick oven ten minutes.
