Does anyone have either a sponge or maderia cake recipe for an 11inch square tin. Thanks?

Line your tin and set oven to gas 4





1lb Caster Sugar


1lb Softened Butter


8 Med Eggs


1lb SR Flour - sifted


juice of 1 Lemon


zest of 2 un-waxed lemons


candied lemon peel for top


Cream together sugar and butter alternatively add eggs and flour, stir in lemon juice and zest. Spoon into prepared tin and place a pattern of candied lemon peel on top, Bake near the bottom of oven for 30 mins, turn down oven to Gas 3 and bake further 30 mins or until the cake comes away from the side of the tin. Leave to cool in tin for 20-30mins before turning out onto a wire rack





For sponge omit the lemons
