Need an icing recipe for a strawberry bundt cake?

I am making a boxed strawberry flavored cake and am using a heart-shaped bundt pan.





Any suggestions on a glaze or icing I can use?

I have two ideas but the one I think I'd like best is a lemon zest frosting with that strawberry cake.





Lemon Frosting


Since you're making a bundt cake you need the frosting consistency to be thinner then a layer cake so instead of having your butter at room temp





-Melt 4T butter (1/2 of a stick) in the microwave or on the stove. (Be careful not to burn it)





-Mix in 2c confectionery sugar.





-1 and 1/2Tbsp lemon juice (from a lemon or or a bottle of lemon juice)





-1tsp lemon zest (the very yellow outside of the lemon) (This is optional and don't worry about it if you don't have a lemon but it makes it zingier.)





1/2tsp vanilla





2T water





Mix this all together. If the frosting doesn't seem liquidy enough add more water 1t at a time until it is the right consistency.

To make the vanilla frosting do everything above but don't add the lemon juice or zest and change the 1 tsp vanilla to 2.

Ready rolled icing is good, you need an apricot glaze to stick it with though, or you could ice it with butter icing or royal icing. It depends on what you want the icing to look like... If u want it to be smooth use pre-rolled icing from the shops but if you want it to look more home made, use butter or royal icing... However in my opinion butter icing can be quite a strong taste. I'd use royal icing or pre-rolled icing. (I've made one of these cakes today and I used the pre-rolled stuff :D)
Cream cheese icing would be wonderful with a strawberry cake.





1/2 c. butter, softened


1 (8 oz.) pkg. cream cheese


1 (1 lb.) box powdered sugar


2 tsp. vanilla





Mix together with beaters till smooth. You can add a little red food coloring to make a pretty pink frosting, and it's yummy!
I would get some bottles of ice cream topping - one chocolate and one carmel. Heat the bottle in the microwave for a bit - not hot just warm and drizzle them over the cake. You could get very creative with the designs. It's quick, easy and good. I do this a lot especially with bunt cakes because I like the way it slips over the sides without puddling up on the plate and it is just so easy.
take a few tbsp of orange juice and start with 1 cup of powdered sugar, add milk until it's the desired consistency (adding sugar and juice as necessary) then put the cake on a drying rack with a cookie sheet underneath. drizzle the icing over it.
Since tomorrow is Valentines day use a chocolate glaze
