Does anyone have a good recipe for a vegan birthday cake?

non-vegans will be in attendance (including me) so please try and come up with something that even the non-vegans will enjoy with her.Does anyone have a good recipe for a vegan birthday cake?
This is my favorite chocolate cake of all time! (be it vegan or not)





Deep Chocolate Vegan Cake





Ingredients:


- 1 1/2 C. unbleached white flour


- 1/3 C. unsweetened cocoa powder


- 1/2 tsp. baking soda


- 1/2 tsp. salt


- 1 C. sugar


- 1/2 C. vegetable oil


- 1 C. cold brewed coffee or water


- 2 tsp. pure vanilla extract


- 2 Tbsp. cider vinegar





1. Preheat the oven to 375.


2. Oil a 8'; square or 9'; round cake pan and dust the bottom with a little cocoa powder (it sounds strange, but it helps)


3. In a medium bowl, sift together flour, cocoa, salt, soda, and sugar. In another bowl combine the oil, water or coffee, and vanilla. Pour the liquid ingredients into the dry ingredients and mix until well blended and smooth. (You don't need an electric beater for this last part; it comes together real easy by hand with a whisk too)


4. Add the vinegar and stir briefly; the baking soda will begin to react with the vinegar right away, leaving pale swirls in the batter. Without wasting any time, pour the batter into the prepared baking pan.


5. Bake for 25-30 mins. Serve the cake right from the pan; or when it's cool, transfer to a plate.





As far as vegan frostings go; you can make some good ones with a little bit of crisco, confectioner's sugar and flavoring.Does anyone have a good recipe for a vegan birthday cake?

here is a basic cake recipe you can use:





2 C. all purpose flour





1 C. Brown sugar or Fructose or any subsitute





3 tsp. Baking powder





1 tsp. Egg replacer Powder(you can get this at all most any health food store) or 1Tbsp. flax seed meal (but note if you use flax seed meal your cake will have brown specks unless you sift it, and it might have a slightly different flavor. So TRY to use egg replacer powder)





1/4 C. plus 1/2 Tbsp. Earth balance buttery spead or whatever brand you use of margarine





1-1/3 C. water or milk





NOW IF YOU WANT A YELLOW CAKE ADD YELLOW FOOD COLORING AND VANILLA....


AND IF YOU WANT A WHITE CAKE ADD VANILLA FLAVOR...


YOU CAN ALSO TRY ALMOND FLAVOR OR LEMON..


OR WHATEVER YOU WANT..


----Mix all together well until smooth with no lumps..


pour into greased pan or silicone cake pan..


bake in preheated oven @ 375F...for 30 minutes or til toothpick comes out clean..





Texture shold be spongey and light..

Seriously, omnis never know any of those recipes are vegan and when they find out, they are extremely surprised. Be prepared for the ';What do you replace the eggs with ?!?'; questions and ';But I thought vegan food was supposed to be gross.'; remarks.

p.s. Omnivores eat everything vegans eat, they just eat animal products on top of that. Vegan food is appropriate for vegans, vegetarians, AND omnivores alike.
Make cup-cakes. You can then split what non-vegans may like, while making what vegans can like.
