Anybody have a recipe for pineapple upside cake that you fix in a skillet?

VERY Southern Pineapple Upside-Down Cake





3/4 cup whole milk


1 cup coarse-ground cornmeal


4 ounces unsalted butter (8 tablespoons)


1 cup packed dark brown sugar


6 slices canned pineapple, in heavy syrup, reserve syrup


6 maraschino cherries


1/3 cup chopped pecans, toasted


3 tablespoons canned pineapple syrup


1 cup all-purpose flour


2 teaspoons baking powder


1/2 teaspoon salt


3 whole eggs


3/4 cup granulated sugar


1/2 cup canola oil





Preheat oven to 350 degrees F.





In a microwave-safe dish, bring the milk to a boil. Remove the milk from the microwave and add the cornmeal. Stir and let soak at room temperature for 30 minutes. Set aside.





Melt the butter in a 10-inch cast iron skillet over medium heat. Once the butter has melted, add the brown sugar and stir until the sugar dissolves, about 2 minutes. Remove the skillet from the heat and carefully place 1 slice of pineapple in the center of the pan. Place the other 5 slices around the center slice in a circle. Place the cherries in the centers of the pineapple slices and sprinkle the nuts evenly over the fruit. Drizzle the reserved pineapple syrup over top.





Sift the flour, baking powder, and salt into a medium mixing bowl and whisk to combine.





In a separate mixing bowl, whisk the eggs. Add the sugar to the eggs and whisk to combine. Add the canola oil and whisk. Add the cornmeal and milk mixture to the egg mixture and whisk to combine. Add this to the flour and stir just until combined. Pour the batter over the fruit in the skillet and bake for 35 to 45 minutes, or until a cake tester comes out clean. Remove from oven and let cool for 30 minutes in the skillet. Set a platter on top of the skillet and carefully invert the cake. Preheat oven to 350掳 F.


Melt the butter in a 9-inch cast iron skillet. Add the brown sugar and pecans; stir well to thoroughly combine, then turn off the heat -- don't cook it. Arrange 8 pineapple slices in a single layer over the brown sugar mixture (your 9-inch skillet should accommodate 8 slices without overlapping). Set the skillet aside.


Combine the flour, baking powder and salt in a bowl; set aside.


Beat the egg yolks at medium speed until they are thick and lemon colored. Gradually add the sugar, continuing to beat. Add the flour mixture to the yolk mixture, and stir in the reserved pineapple juice.


Beat the egg whites until stiff peaks form. Fold the whites into the cake batter. Pour or spoon the batter evenly over the pineapple slices.


Bake at 350掳F for 40 to 45 minutes. Cool the cake in the skillet for 30 minutes; then invert it onto a serving plate. Place a maraschino cherry in the center of each pineapple ring.

Pineapple Upside-Down Cake





1 stick butter





3/4 cup brown sugar





1 cup Pecans





1 can (20 oz) pineapple slices





Maraschino cherries





1 package yellow cake mix- prepared





Cool Whip





Make the cake as directed on the box except mix the pineapple juice from the can with water to equal the equivalent specified in the cake recipe.





Melt butter in 12'; skillet. Stir in brown sugar.





Lay out Pineapple Slices put cherries in the middle of each slice. Sprinkle with Pecans. Pour cake mix over brown sugar mixture.





Bake at 350 degrees in covered skillet for 40 minutes. Cool slightly and turn onto platter. Serve with Cool Whip

PINEAPPLE UPSIDE DOWN SKILLET CAKE





4 egg yolks


1 tsp. vanilla


1 c. flour


3 tbsp. butter


1 (15 oz.) can pineapple, any kind


1 c. granulated sugar


1 tsp. baking powder


3 tbsp. hot water


1 c. brown sugar





Beat the yolks. Add sugar, hot water and flour sifted with baking powder. Add vanilla. Fold in stiffly beaten whites of the 4 eggs. In a skillet, put butter and brown sugar. Stir over low heat until it's dissolved. Add drained pineapple. Pour the cake batter over this pineapple mixture. Bake 30-45 minutes in 350 degree oven. Then turn cake upside down on a plate and serve.

5. Place cherries in center of slices.


6. Beat remaining ingredients till well blended.


7. Pour over pineapple in skillet and bake for 35 to 45 min or untill tooth pick inserted comes out clean.


8. Remove from oven and turn onto heat proof plate.
