INGREDIENTS:
2 cups all-purpose flour
1/4 teaspoon salt
1 tablespoon baking powder
1 cup butter, softened
1 cup sour cream
1 1/2 cups white sugar
2 eggs
1 tablespoon vanilla extract
1/2 cup brown sugar
1 cup chopped pecans
1 teaspoon ground cinnamon
2 tablespoons butter, melted

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with aluminum foil, and lightly grease with vegetable oil or cooking spray. Sift together the flour, baking powder, and salt; set aside.
In a large bowl, cream the butter until light and fluffy. Gradually beat in sour cream, then beat in sugar. Beat in the eggs one at a time, then stir in the vanilla. By hand, fold in the flour mixture, mixing just until incorporated. Spread batter into prepared pan.
To make the Pecan Topping: In a medium bowl, mix together brown sugar, pecans and cinnamon. Stir in melted butter until crumbly. Sprinkle over cake batter in pan.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack, and remove foil.Anyone have a a good recipe for coffee cake?

Iced Chocolate Bar Coffee Cake
1 x 397g tin Sweetened Condensed Milk
2 陆 cups or 600ml liquid whipping cream
2 Kitkat Chunky bars
1 陆 tablespoons of instant coffee, dissolved in 2 tablespoons of hot water
preparation

1.Combine Sweetened Condensed Milk and liquid whipping cream in an electric mixer, beat until thick and creamy.
2.Pour half of the mixture into foil-lined 12cm x 23 cm loaf pan, place Kitkat Chunky bars, freeze for 陆 an hour.
3.Add instant coffee to the remaining cream mixture, mix until combined.
4.Take out the cake from freezer, spoon over the coffee mixture, cover with cling film and freeze for at least 12 hours until set.
5.Cut into slices to serve.
Serving tips:
*serve with chocolate sauce or orange marmalade and crushed biscuits.
*Take out the cake from the freezer and put it in the fridge for 15-25 minutes to make it easier to slice.
*Dip the base of the loaf pan in hot water, for 6 seconds, then flip the cake over serving dish.

easy microwavable 5 min coffee sponge creamless cake :
1 cup self raising flour
1 tbsp coffee/mocha/cocoa powder
2 tbsp sugar
1 cups whole milk (low fat or can of evaporated milk is gd)
2 egg yolks
2 egg whites
1 tsp oil
pinch of baking powder
2 tbsp of butter
1) blend : flour, baking powder, cofee powder, milk, sugar, butter, %26amp; egg yolks.
2) Beat egg whites till fluffy, fold into mixture 1).
3) pour into mini microwavable cups/pans.
4) Microwave on Hg. for 5min./until center is spongy.
5) Let it rest for 2 mins.
6) Remove to cool. u could sprinkle some powdered sugar/
coffee cream (blend coffee powder w/butter), or glaze some of ur fav. fruit icing (belnd ur fav.fruit ie.strawberries w/sugar), or just eat it as it is. enjoy :)
