6 ounces of eggs

6 ounces of sugar

6 ounces of cake flour sifted

0 to 6 ounces of butter

combine the sugar and eggs and whisk over a double boiler untill they reach 110F

move to a stand mixer and whip on high unti they reach what is called 'max volume'. they will hold their volume then start to loose volume slightly.

At this point set the mixer to medium and let it mix for at least 5 minutes. this makes all the bubbles the same size and makes a better crumb.

Put some of the egg foam into the bowl with the butter, mix and set aside.

sift or pour 1/2 the flour and fold in. Add the rest of the flour and the butter and fold in.

Pour into prepared cake pans and back immediately at 350F.

this is enough for one 8 inch cake.

add 2 of each for each cake pan size for lager cakes and less 2 for a 6 inch.

this cake MUST be soaked with a simple syrup before frosting.

if you use a sheet pan this makes a great jelly roll or roulade.I need a good recipe for a simple sponge cake with eggs?
Go to a major supermarket and check out the boxes of sponge cake and keep looking until you fine one you think you will be able to do. Some of them have very simple recipes. Are you still in school? If you are are does your school have a cooking class? If it does speak to the teacher. If you are working ask if any of your coworkers can help. This could be a good way to make friends on the job.If you are a stay at home mom see if a neighbor can help.
4 eggs

2 cups granulated sugar

2 tsp. flavoring (any Kind, Optional)

2 Tbsp. melted butter or margerine

1 cup hot milk

2 cups flour

1/2 tsp. salt and 2 tsp. baking powder

Beat the eggs and sugar together until light. mix the flavor with the butter and the hot milk. Stir into the egg mixture and blend thoroughly. Sift the dry ingredients and fold lightly into the batter until smooth. Bake in either a greased and floured 9X13 cake pan at 350 degrees for 25-30 minutes or in an ungreased tube pan at 350 degrees for 45 minutes. I've tried them and they are great with or without icing.
