Does anyone have a really great chocolate cake recipe?

there is a really great choc cake recipe on the box of Hersheys cocoa powder, and a recipe for chocolate icing that i use all of the time...very nice, moist cake. if you want to dress it up some, put some pecan halves on it, and/or, inside, put raspberry jam or preserves between at least one of the layers...or cover with coconut.Does anyone have a really great chocolate cake recipe?

Then make with this dark chocolate frosting:





Mix 1/2 Cup granulated sugar with 2 Tablespoons corn starch.





Pour in COLD 1/2 C milk





Whisk until corn starch is dissolved.





Add a heavy pinch of salt.





Add 2 Oz. unsweetened chocolate squares





Put over medium heat, stirring constantly. Chocolate will melt and then the frosting will come together and thicken. When it is thick enough to drop off a spoon in clumps, pull from the heat.





Add 2 Tablespoons of butter and a teaspoon of vanilla.





Whisk together until incorporated.





Let frosting cool and set a little before putting on the cake, but use while still warm.





This cake is best made at least 1 day ahead for best results.

This recipe is one of the best. The Chocolate Mayo Cake is moist, delicious and chocolaty good.





Dry Ingredients, sift:


2 cups all-purpose flour


2/3 cup unsweetened cocoa powder


1 1/4 tsp baking soda


1/4 tsp baking powder





Wet Ingredients:


3 large eggs


1 2/3 cups sugar


1 tsp vanilla extract


1 cup reduced-calorie mayonnaise


1 1/3 cups cold water








# Preheat oven to 350 degrees. Butter and flour


two 9-inch cake pans. Line bottom with parchment


paper. Measure and sift dry ingredients, set aside.





# In a large mixing bowl, on high speed mix eggs,


sugar and vanilla for 3 minutes or until fluffy. Reduce


speed to low, blend in mayo. Using a wooden spoon,


stir the flour mixture into the egg mixture 1/3 at a


time, alternating with the water and beginning and


ending with flour.





# Divide batter between the pans. Bake for 30 minutes or until toothpick inserted in center comes out with moist crumbs. Cook cake in pans on a rack for 10 minutes. Turn out onto rack, peel off paper and let stand 10 more minutes.





Frosting:


1 cup semisweet dark chocolate chips


1/4 cup butter


1/2 cup sour cream


1 teaspoon vanilla


1/4 tsp salt


2 1/2 - 2 3/4 cups sifted powdered sugar





# Melt chocolate with butter in top of double boiler


over hot water. Remove from hot water; stir in sour


cream, vanilla and salt. Slowly beat in powdered sugar


until desired spreading consistency. Makes


enough frosting to frost a 2-layer cake or bundt cake.
