Birthday cake recipe for my mom?

I need a recipe for my mom's birthday cake. It's on Monday, and she really isn't into sweets, so chocolate is out. Any ideas? I want it to be really good. Thanks.





**There's this kind of cake that is kind of wet(very moist), but I have no idea what it's called. EVERY DAY IS SOMEBODY'S BIRTHDAY CAKE





2 1/3 c. self-rising flour


1 1/2 c. sugar


1/2 c. shortening


1 c. milk


1 tsp. vanilla flavoring


2 eggs, unbeaten





In a large mixing bowl, combine flour, sugar and shortening. Mix well. Add milk and flavoring gradually, scraping bowl frequently. Add unbeaten eggs and beat another 2 minutes. Pour into 2 (9';) layer pans or this almost fail-proof cake is excellent for use in mold cake pans. Bake at 350 degrees for 35 minutes if using regular cake pans or for 45 minutes if using a mold pan. Cool and ice with Birthday Cake Icing (below).





BIRTHDAY CAKE ICING:





1 box confectioners' sugar


1 c. shortening


1 tsp. almond flavoring


1/4 c. evaporated milk





Combine all ingredients and mix well (at least 5 minutes). For chocolate icing, add 1/4 cup cocoa.





Birthday Cake Icing can also be used for decorating and it stays soft for days. Left over icing can be refrigerated and used later.
WHITE FRUITCAKE





1 lb. butter, softened


2 c. sugar


6 eggs, separated


1 (15 oz.) pkg. golden raisins


1 c. diced pineapple, candied


1 1/2 c. diced candied red cherries


1 1/2 c. diced candied green cherries


1 c. flaked coconut


1 lb. pecans, chopped fine or ground


4 c. all-purpose flour


1 (20 oz.) bottle lemon extract


Honey


Additional candied red %26amp; green cherries, optional





Cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Combine fruit, pecans and 1/2 cup flour; mix well. Add fruit mixture to creamed mixture. Stir to blend. Stir in remaining flour and lemon extract. Beat egg whites until stiff. Fold into batter. Spoon batter into a well greased 10 inch tube pan. Bake at 300 degrees for 2 1/2-3 hours or until cake tester is done. Brush with honey 30 minutes before cake is done
