You can substitute artificial sweeteners for regular sugar in most recipes and maybe use corn or vegetable oil,canola oil,safflower oil.
You may be able to reduce the amount of regular sugar or mix the regular sugar (50/50) with Splenda or another artificial sweetener.
I think you can also download recipes from their websites.
There are cook books at Wal-Marts and other stores for diabetics.

sorry...i don't have a great recipe, but for a more natural substitute, i sometimes use applesauce to make cookies, and it seems you can also use it in cakes. good luck! i love cooking experiments! :)
